Next year, I will! Sans doesn't have a canonical birthday, but the one I made up for him is the 1st of April, 1987.
Why this date? Well, first of all, it's April Fool's day, a holiday dedicated to the pranks and tricks he loves so much. And 1 is Sans's significant number (like how Chara's number is 9), so being born on the first day of the month is very fitting for him.
That's how I chose his birth time, too: 13:10— ten past one in the afternoon. The digits in 13 add up to 4, so it's kinda like his birthdate all over again, hehe!! Anoter time loop for my beloved to be trapped in~
Secondly, when deciding on the date, I mistakenly believed that Comic Sans (the font) was published on April 1st. Actually, it was bundled with the Windows 95 OS, which came out on the 24th of August, 1995. The April Fools release date was for Comic Sans Pro, an updated version of the font created some 15 years later.

Back on topic: the year 1987 was chosen to create a nice age difference between him and his brother. Assuming Papyrus, AKA "CoolSkeleton95," was born in 1995, that would make Sans ~8 years his senior. It seems like a big enough gap where Sans could realistically raise him as a babybones.
Of course, it makes our age gap even more prominent... He's 13 years older than me!!! I'd never go for something like this IRL, but with him I like it like this.
We met when I was 15, so he'd have been 28 then. If he were to be frozen in time at Undertale's release date, he'd be 28 forever. I like the idea of him ageing alongside me, though. I'd get sad if one day I had to be older than him!What would you get him for his birthday?
I think he would prefer an experience to a material gift, so every year I'd take him out to do something fun with all of our friends.
Go-kart racing or the planetarium were my immediate ideas. He might also like to go to a concert or a science expo, and I'd pull some strings to get him a chance to talk with whoever he admired there.
I'd also love to go on a cross-country road trip with him, stopping in random locations to sample the local hamburgers and fries. We'd snap selfies in front and inside of every diner, and pictures of the food, too, alongside handwritten notes on the restaurant experience. Everything would go in a gigantic travel album. As we ate, we'd use the language of serious food critics, then give our final rating in "boigs out of 10." It'd be fun to look back on the whole experience, to fight over which burger was really the best, and know that it didn't really matter. The best burger of all was the one we ate together.
Whatever it is, I'd want it to be big and showy, the sort of thing that you have to really plan and save up for. I'd want to make him feel totally cherished and loved on his special day.
Would he like a party, or something more intimate?
A party, definitely.
I'd plan him a surprise party and— of course— he'd be aware of it the entire time, not just because I'm not great at keeping exciting secrets, but because Sans has a way of knowing things he shouldn't. He is very, very intelligent, highly observant, and can read people so lightning fast that you might think he's got superpowers. But he doesn't. He's just a normal guy!
Basically, it's totally useless to try to hide anything from him, and I'd know that he knows about his party, and he'd know that I know that he knows, but we'd carry on as if everything was totally normal, albeit with a layer of irony and coyness. When the fateful day arrived, he'd keep up the act, maybe even make a joke about how "surprised" he is. It doesn't matter if it's truly unexpected, in the end. The thing that actually surprises him is just how much people love and care for him. And I love and care for him the most!

Yes! All in the name of making each other laugh.

We're under the mistletoe because he wants to kiss me, and by God he is going to. Secondly, he would play it cool. Remark casually, "oh, look at that. You know what this means, don't you? What we have to do?" And I'm over here going tomato red 'cause omg Sans Undertale is gonna KISS ME (even in an established relationship, I genuinely think I'd be flustered by him 24/7/365), so I'd close my eyes and wait and....
Well, something totally unexpected would happen. I'd get my kiss in the end, but not without being teased and tormented first! The only problems is that I'm not funny enough to think of a hilarious Sans-style practical joke on the spot, so I'll have to come back to this question later when I have more ideas.

Sans is an expert at helping people, though, and if I was somebody important to him, then he'd do his best to make me happy. He's more than capable of giving me something I really wanted or needed, perhaps even something I never expected to get.
I feel nervous about dreaming big, even in fantasy, but I'll try! Maybe... maybe he'd get me a hacked Nintendo Switch? I'd actually really like that, LOL.

When We First Met
I'm very sappy, so I like to mark dates of meeting, too. With Sans, these early days are especially important because it took many, many more years for our romance to really begin.
When did you discover your husbando?
I met Sans on the 14th of November, 2015.
UNDERTALE had just come out. A few of my Twitter mutuals had posted screenshots that looked kind of interesting, but I didn't pick it up until my best friend said she thought I'd like it. Hah, she had no idea just how obsessed I'd become!
Anyways, I was able to calculate the exact date because there was an event taking place at my high school that weekend— one to which I actually brought my laptop so I could keep playing, LOL! I was in Waterfall at that time, so when I met Sans, I was still at home. It's nice to picture myself in my old bedroom, encountering him for the very first time... Warms my heart a little, you know?
What was your first impression of him?
I could talk forever about how Undertale so expertly uses first impressions and their subversions as a storytelling device, but I won't go into detail right now. I'm 90% sure there's already an article/Tumblr post about that anyway, which I would like to hotlink if I ever find it. THIS IS A LOT OF RAMBLING TO SAY....
My first impression of Sans was complete and total fear. I think his introductory stalking sequence is one of the scariest parts of the entire game. It's also, chronologically, the first. It follows an otherwise (mostly) tame experience— at least a far as horror goes— and comes at a critical point in the narrative when you have every reason to feel worried about what's going to happen next.
So, imagine you're me, age fifteen, a chickenshit little girl who covers the screen with her hands when she watches gameplay footage of RPGMaker horror titles on YouTube. The future love of your life is feeding you a sudden spoonful of Undertale-style suspense. You're freaked out, and honestly kind of mad, because nobody warned you that this was a scary game!!!
You do your best to stay calm and progress through the map, but your heart leaps into your throat when you see your character approached by a shadowy figure from behind. It's a cutscene. You can't escape. The horrifying creature who has been stalking you through the woods demands you shake his hand. You watch with held breath as your character complies. And then a fart noise plays.
The old whoopie cushion in the hand trick. It's ALWAYS funny.
Needless to say, I was immediately sold.
